Welcome to Kirby

In a town of 76 people, resides the Wyoming Whiskey Distillery. A unique place that creates a one-of-a-kind whiskey.

It’s not just our whiskey that’s made here. It’s our lives, too; our pride, history, and inspiration. Every day we make an uncompromising commitment to work with the land’s extremes and its people to make a whiskey that is worthy of Wyoming.

Our founder's have history in Wyoming dating back to 1890. Fourth-generation ranchers, the Meads, were looking for a way to diversify their cattle business when the idea for Wyoming Whiskey was born.

We don’t break the law. We make it. We built the first legal distillery in the great state of Wyoming, where we make every drop of our craft whiskey in small batches.

Every drop we sell, we make. Our Master Blender, Brendan Cook, hand selects every barrel that is put into production. Each of our releases is handcrafted to the highest quality.

We wait a minimum of 5 years as the most unique maturation environment in the whiskey world takes effect. Absorbing nature's full influence before it makes its way to you.


THE STATE DEFINES US

From its beginnings in ancient glaciers, the water that makes our whiskey is filtered by a limestone aquifer deep in the earth. To this wildly pure source, we add the finest Wyoming grain; and then we let time do its work. Every drop is aged for a minimum of five years, refined by the unique environment of extreme hot and cold. The result? Homegrown flavor you won't find anywhere else.

Our commitment to excellence extends to our ingredients. We exclusively source non-GMO grains from local farms in Byron, collaborating closely with farmers to select corn and wheat strains that enhance our bourbon's unique flavor profile.

Glacier Pure Water

The foundation of our whiskey lies in the pure waters of the Madison Formation, drawn from a mile underground and untouched since the bronze age. This pristine water serves as the cornerstone of our craft, imparting a clarity and depth to every sip.

Extreme Temperatures

Our home in Kirby, with its ice-cold winters and scorching summers, embodies the true essence of Wyoming weather, ranging from a frigid -66°F to a blistering 116°F. These wild temperature swings breathe life into our barrels, allowing them to absorb the rich flavors of oak and environment.

The Yeast

The secret stuff. While our Mash Bill is in clear view, ask any distiller about their yeast and you’ll usually get a deafening silence. We’ll give you this much. To attain our profile, we use a combination of 2 yeasts; a high-yield yeast and a second proprietary yeast that yields a bit less but produces a slightly fruitier alcohol.

Aging in Wyoming

The harsh environment creates a natural hierarchy within our rickhouse, with top barrels experiencing temperatures 20 degrees higher than those at the bottom. To harness this diversity, we've developed a ground-up batching approach, ensuring each batch is crafted with precision and care.
